Vegetable Cheese Toast

 Cravings are a real thing that we all experience and even more so when you are pregnant. Personally. I haven't had any that stand out, I have just continued to eat the way I normally do and I feel extremely lucky because of that!!

But when I have been feeling like I want to indulge and have unhealthy cravings, I really think hard about what I can substitute them for instead. I have been approaching cravings completely different than most pregnant women. I am not sure if it has something to do with my veggie and plant based diet or because I haven't drawn towards healthier options?? Either way I am feeling great with my healthier perspective on snacking and I wanted to share with you all some of my favorite things to snack on or what I have for my lunch and dinner.

Vegetable Cheese Sandwich is the most common type of sandwich in India. It consists of vegetable and cheese filling between two slices of bread coated with butter and toasted on pan. Most commonly used vegetables are potatoes, beetroots, bell peppers (capsicum), carrots and onion. It's a quick and easy recipe if you have potatoes boiled before hand. ( Well I mostly have whole 8 grain bread but here I used whole wheat white bread instead)

Prep Time : 10 minutes | Cook Time : 10 minutes | Serves : 2

Ingredients :

  • 1/4 cup Potatoes (boiled and mashed)
  • 1/4 cup Onions (chopped)
  • 1/4 cup Bell Pepper / Capsicum (chopped)
  • 2 Green Chillies (chopped finely)
  • 2 tbsp Coriander Leaves (chopped finely)
  • 1/4 cup Mozzarella Cheese (grated)
  • 4 Bread Slices (I opted for whole wheat white)
  • 2 tbsp Butter
  • 1 tsp Black Pepper Powder
  • 1 tsp Chaat Masala (optional)
  • Salt To Taste

Method:

  • In a medium bowl, combine mashed potatoes, bell peppers (capsicum), onions, cheese, green chilies, coriander leaves, pepper powder, chat masala and salt.
  • Take a bread slice and apply butter.
  • Take another bread slice and add generous amount of prepared stuffing on it.
  • Cover the stuffed slice with buttered slice, but make sure the butter side is facing up.

  • Heat a pan on low to medium heat and place the stuffed bread, butter side down.
  • Let it cook for a minute or two.
  • Now add butter to the upper slice.
  • Make sure to check if it has turned golden brown before flipping to the other side.
  • Once the sandwich is brown and crisp on both the sides, transfer it to a serving plate and cut into two pieces.
  • Serve hot with green chutney or ketchup.
